15 Minute Tuna Meal Prep Salad

Ingredients

  • 2 cans (170g) Ocean’s Chunk Light Tuna, drained
  • 1 can (16oz) chickpeas, drained and rinsed
  • 1/2 cup sun-dried tomatoes, roughly chopped
  • ½ cup canned artichoke hearts, roughly chopped
  • ¼ cup red onion, sliced
  • ½ cup olives
  • ½ cup aged cheddar, cubed
  • 2 tbsp olive oil
  • 1 tbsp red wine vinegar, apple cider vinegar or balsamic vinegar
  • 2 tbsp lemon juice
  • ½ cup basil, roughly torn
  • Salt and pepper, to taste

Directions

  1. To prepare salad, mix all ingredients in a large bowl.
  2. Season with salt and pepper.
