15 Minute Tuna Meal Prep Salad
- 2 cans (170g) Ocean’s Chunk Light Tuna, drained
- 1 can (16oz) chickpeas, drained and rinsed
- 1/2 cup sun-dried tomatoes, roughly chopped
- ½ cup canned artichoke hearts, roughly chopped
- ¼ cup red onion, sliced
- ½ cup olives
- ½ cup aged cheddar, cubed
- 2 tbsp olive oil
- 1 tbsp red wine vinegar, apple cider vinegar or balsamic vinegar
- 2 tbsp lemon juice
- ½ cup basil, roughly torn
- Salt and pepper, to taste
- To prepare salad, mix all ingredients in a large bowl.
- Season with salt and pepper.
