15 Minute Mexican Tuna Bowl

Ingredients

For the dressing: 

  • ¼ cup sour cream 
  • 1 tbsp water 
  • 1 garlic clove, minced 
  • 1 lime, juiced 
  • 1 tsp chipotle powder 
  • Salt and pepper to taste 

 

For the bowl: 

  • 1 cup black beans 
  • 1 cup corn 
  • 3 cups lettuce, roughly chopped 
  • 1 cup cucumber, cubed 
  • ½ cup pico de gallo or salsa 
  • 4 radishes, quartered 
  • 1 avocado, thinly sliced 
  • 2 pouches (90g) Ocean’s Peri Peri Tuna 
  • Cilantro, to garnish 
  • 1 lime, to serve 

Directions

  1. To make the dressing, whisk all ingredients together in a small bowl.  
  2. Arrange all ingredients in a bowl and garnish with the cilantro.  
  3. Drizzle with dressing and serve with lime wedges.
