Tuna Inari

Ingredients
- 170g (1 can) Ocean’s Albacore Solid White Tuna, drained
- 3 tbsp (45 ml) Japanese mayonnaise
- 2 tbsp very finely diced carrots
- 1 tsp (5 ml) mirin
- 1 tsp (5 ml) sriracha (optional)
- 2 tbsp (30 ml) sliced green onions, plus more for garnish
- 1 cup (250 ml) cooked sushi rice, warm (either store bought or freshly cooked)
- 8 x seasoned tofu pockets (Inarizushi)
- Toasted sesame seeds, for garnish
- Pickled ginger, to serve

Directions
- In a mixing bowl combine tuna, mayonnaise, carrots, mirin, sriracha (if using) and sliced green onions. Mix well and adjust seasoning to taste.
- Inside each tofu pocket, spoon about 2 tbsp (30 ml) sushi rice. Fill the rest of the way with tuna mixture and garnish with a sprinkle of toasted sesame, a few green onions and some pickled ginger.
