Sesame and Tuna Green Bean Salad

Ingredients
- ¼ cup plus 1 tbsp (75 ml) toasted sesame seeds, plus more for garnish
- ¼ cup (60 ml) mirin
- 2 tbsp (30 ml) Nonna Pia’s Apple Cider Vinegar
- 1 tbsp (15 ml) soy sauce
- 1 tsp (5 ml) sesame oil
- 1 tsp (5 ml) granulated sugar
- 2 large handfuls (about 12 oz/340 g) green beans, trimmed
- 170 g (1 can) Ocean’s Chunk Light Tuna
- 1 green onion, julienned and soaked in ice water for a few minutes, for garnish
- 2 radishes, thinly sliced, for garnish

Directions
- Combine sesame seeds, mirin, vinegar, soy sauce, sesame oil and sugar in a jar and, using a hand blender, puree until smooth. Adjust seasoning to taste. This can also be prepared with a small food processor or ground in a mortar and pestle with most of the liquid added towards the end.
- In a pot filled with boiling salted water, blanch green beans until tender-crisp, about 3 minutes. Cool in a bowl of iced water or under a cold running tap, then drain and pat dry. Cut in half, lengthwise on a bias.
- In a mixing bowl, combine green beans and sesame dressing and mix well to coat. Gently fold in tuna and adjust seasoning to taste.
- Transfer to a serving dish and garnish with a few extra toasted sesame seeds, julienned green onions and finely sliced radish.
