Mediterranean Lunch Box
- 3 cans (80g) Ocean’s Solid Light Tuna in Basil Infused Oil, drained
- 1 can chickpea, drained and rinsed
- 2 cups arugula
- 1 cup cherry tomatoes, halved
- ½ cup kalamata olive, pitted and halved
- 2 tbsp feta, crumbled
- ¼ cup pesto
- 2 tbsp Nonna Pia’s Classic Balsamic Glaze
- Salt and pepper to taste
- Basil, to garnish
- Arrange all ingredients in a container.
- When ready to serve, squeeze the lemon juice on top and drizzle with balsamic glaze. Season with salt and pepper and garnish with basil.
