Tuna-Tot Hot Dish

Ingredients

  • 1½ cups cottage cheese
  • 1 egg
  • ½ tsp garlic powder
  • ½ tsp onion powder
  • ½ tsp each salt and freshly ground black pepper, plus more to taste
  • 1 cup thinly sliced cremini mushrooms
  • ½ zucchini, peeled into thin strips with a vegetable peeler to resemble noodles
  • ½ cup green peas
  • 3 x 80 g cans Ocean’s Solid Light Tuna in Basil Infused Oil, drained
  • ½ cup shredded cheddar
  • 1 x 16 oz bag frozen tater tots

Directions

  1. Preheat oven to 425°F and adjust rack to the middle position.
  2. Lightly grease an 8 x 11-inch baking dish.
  3. In a bowl, combine cottage cheese, egg, onion powder, garlic powder, salt and pepper.
  4. Purée until smooth using a hand blender or food processor.
  5. Set aside.
  6. Heat a bit of olive oil in a nonstick pan over medium-high heat.
  7. Sauté mushrooms until golden brown, then add zucchini ribbons and peas.
  8. Toss gently for about a minute and remove from heat.
  9. Add tuna and cottage cheese mixture to the pan and mix until just coated.
  10. Transfer to prepared baking dish.
  11. Sprinkle shredded cheddar over the top and arrange tots in a single layer.
  12. Bake for 25 to 30 minutes, until tots are golden brown, and the filling is bubbling around the edges.
