
Tuna-Tot Hot Dish

Ingredients
- 1½ cups cottage cheese
- 1 egg
- ½ tsp garlic powder
- ½ tsp onion powder
- ½ tsp each salt and freshly ground black pepper, plus more to taste
- 1 cup thinly sliced cremini mushrooms
- ½ zucchini, peeled into thin strips with a vegetable peeler to resemble noodles
- ½ cup green peas
- 3 x 80 g cans Ocean’s Solid Light Tuna in Basil Infused Oil, drained
- ½ cup shredded cheddar
- 1 x 16 oz bag frozen tater tots

Directions
- Preheat oven to 425°F and adjust rack to the middle position.
- Lightly grease an 8 x 11-inch baking dish.
- In a bowl, combine cottage cheese, egg, onion powder, garlic powder, salt and pepper.
- Purée until smooth using a hand blender or food processor.
- Set aside.
- Heat a bit of olive oil in a nonstick pan over medium-high heat.
- Sauté mushrooms until golden brown, then add zucchini ribbons and peas.
- Toss gently for about a minute and remove from heat.
- Add tuna and cottage cheese mixture to the pan and mix until just coated.
- Transfer to prepared baking dish.
- Sprinkle shredded cheddar over the top and arrange tots in a single layer.
- Bake for 25 to 30 minutes, until tots are golden brown, and the filling is bubbling around the edges.
