Tuna Taquitos

Ingredients

  • ⅔ cup cream cheese, softened to room temperature
  • 2 tbsp pickled jalapenos, diced
  • 2 tbsp chopped fresh cilantro, plus more for garnish
  • 1 tbsp finely sliced green onions, plus more for garnish
  • ½ tsp chili powder
  • ½ tsp onion powder
  • A pinch granulated garlic
  • A dash hot sauce (optional)
  • 1 can (170 g) Ocean’s Flaked Light Tuna, drained
  • ½ cup shredded cheddar cheese
  • 6 to 8 soft corn tortillas
  • Finely shredded iceberg lettuce or cabbage, to serve
  • Sour cream, to serve
  • Avocado slices, to serve

Directions

  1. In a mixing bowl, combine cream cheese, diced jalapenos, cilantro, green onions, chili powder, onion powder, granulated garlic and hot sauce, if using.
  2. Mix until smooth then fold in Ocean’s Flaked Light Tuna and shredded cheddar cheese.
  3. Wrap tortillas in a slightly damp towel or place in a Ziplock bag, place in microwave and cook for 15 second bursts, until soft and pliable.
  4. Spoon about ¼ cup of tuna filling in the center of one warmed tortilla and roll into a cylinder.
  5. Secure rolled tortilla with a toothpick and repeat until filling is done.
  6. Preheat an air fryer to 400 F.
  7. Spray taquitos with a small amount of baking spray and cook 7 to 10 minutes until filling is warm and tortillas are crispy and golden brown.
  8. Serve on a bed of shredded lettuce or cabbage topped with a dollop of sour cream, avocado slices and extra cilantro and green onions.
