
Tuna Melt Monsieur (or tuna croque monsieur)

Ingredients
- 1 can (80g) Ocean’s Solid Light Tuna in Olive Oil, drained
- 1 tbsp diced cornichons
- 1 tsp Dijon mustard
- 1 tsp minced shallots or green onion
- Pinch cayenne pepper (optional)
- ⅓ cup Gruyere, Emmental or similar style cheese, divided
- 1 tbsp butter, softened to room temperature
- 2 slices white sandwich bread
- ⅓ cup jarred alfredo sauce

Directions
- Preheat oven to 375 F.
- In a small mixing bowl, mix together tuna, cornichons, mustard, shallots and cayenne pepper, if using.
- Lightly butter one side of each piece of bread.
- On the unbuttered side of one slice of bread, sprinkle most of the cheese, reserving about a tablespoon.
- Top with tuna mixture and place second piece of bread on top, buttered side up.
- Heat a small, oven proof frying pan over medium heat.
- Place the sandwich in the pan with cheese side on the bottom.
- Cook until bottom is lightly browned and crisp then flip.
- Top with alfredo sauce and remaining cheese.
- Transfer to the oven and switch to broil setting.
- Cook until sauce and cheese are lightly browned, 3 to 4 minutes.
