Tuna Kimchi Melt

Ingredients
- 170 g (1 can) Ocean’s Flaked Light Tuna, drained
- ⅓ cup (80 ml) kimchi, drained and roughly chopped
- 1 tbsp (15 ml) mayonnaise, plus more for cooking the sandwiches
- ½ cup (125 ml) shredded mozzarella
- ¼ cup (60 ml) shredded cheddar
- 4 slices sourdough bread

- In a mixing bowl, combine tuna, kimchi and mayonnaise and mix well.
- Lay down 2 slices of bread and top each with an even layer of cheese. Spoon tuna-kimchi mixture evenly over top and cover with remaining slices of bread. Gently press to close and spread top of sandwiches with a thin, even layer of mayonnaise. You can also use butter, but mayonnaise gives the bread a nice, golden crunch.
- Heat a frying pan over medium heat and transfer sandwiches, mayonnaise side down to the pan. Spread the other side with a thin, even layer of mayonnaise. Cook for 8 to 10 minutes, flipping every couple of minutes until both sides are nicely browned and cheese is melted.
- Cut sandwiches diagonally in half and serve hot.
